CiboDivino invites a close friend, Marco Scapagnini, to cook alongside Chef Puleo in a simultaneous LIVE steam. Marco will be streaming from his own venue, Marco's Club, in Sicily. Tune in as they teach everyone how to make Pasta all’usticese.
This is a traditional pasta from the Sicilian island of Ustica. The name Ustica was given to the island by the Romans, it comes from ‘ustum’ which in Latin means burned, because of its black and jagged lava rock, eroded tuff, and its cones and craters.
The island is a nature reserve and marine protected area. Here is one of the most important fishing seasons of tuna, called ‘tonnara’, which happens for only 100 days a year and has 9 centuries of tradition. Tuna is the main ingredient in the pasta all’usticese and for those 100 days, every restaurant on the island serves this delicious recipe to celebrate the ‘tonnara’.

PROSCIUTTO DI SAN DANIELE: Made from just two ingredients: high-quality pork legs and sea salt. This prosciutto crudo is produced from start to finish in San Daniele, a small village in Italy's northern region of Friuli Venezia Giulia. It's salted meat that becomes sweet, genuine, and incredibly noble. Expert hands of master prosciutto makers whose age-old knowledge and strict rules transform meat and salt into a masterpiece of flavor and delicacy.
PROSCIUTTO DI PARMA: Prosciutto di Parma still sets the standard. It has always been 100% natural, containing no additives, preservatives, or hormones. Aged twice as long as many other prosciuttos, Prosciutto di Parma creates a depth of flavor. There’s no prosciutto with the same delicate, savory-sweet taste and buttery texture.
The main difference between the two is that prosciutto di Parma has a more nutty and saltier flavor, whereas the prosciutto di San Daniele is darker and sweeter.
GRANA PADANO: Grana Padano is a cheese originating in the Po River Valley in northern Italy that is similar to Parmigiano-Reggiano cheese. There are less strict regulations governing its production compared to Parmigiano-Reggiano.

The traditional pizzaiola dish derives from Naples, Italy, around Mt. Vesuvius. The recipe slowly made its way through Italy, where each region took the recipe & crafted their own, slightly different style. Our version of this dish follows the Sicilian style recipe, featuring simple pantry ingredients like tomatoes, garlic, onion, and white wine.
Carne alla Pizzaiola (beef cutlets in a pizza-style sauce) is an easygoing recipe using familiar ingredients that slow cooks into a tasty, cozy dish. Add-on a bottle of wine, or two, from Daniele’s suggested wine pairings, and dinner is served!

- White: Lunaria Pinot Grigio Sparkling Pet Nat Ancestral - $26
Brut Nature, organic and Biodynamic; Excellence in winemaking. After bottling, fermentation restarts without adding any sugar or yeast. Using the Ancestral method the wine is not disgorged, and lees stay in the bottle to gain higher complexity and aromatic intensity.
Color is pink with salmon like shades, with natural turbidity. Nose of red berries, and a remarkable feel of strawberry. The palate is bubbly and refreshing, over and over, long and persistent on the finish.
- Red: 2017 Fabiana ‘Kalema’ Primitivo di Manduria - $18
The Azienda Agricola Fabiana is managed by brother and sister, Michele e Fabiana. They operate the winery utilizing only sustainable practices, with no chemical herbicide. Harvest is by hand and carried out at night to avoid heat stress.
Deep ruby red color with violet reflections, intense aroma, fruity with notes of prunes, and cherry. Full body wine, soft, balanced, and complex.

This particular vintage of Nebbiolo, 100% of this grape is used to produce Barbaresco, was challenging, and the vineyards lost about 75% of their grapes due to unusual weather conditions. However, there are some fine 2017 Barbaresco, but not that many.

More About Emiliano Monchiero:
Born in Torino in the northwest part of Italy, Emiliano has represented notable wineries around the world. He currently manages the Italian portfolio for Kobrand and serves as the Italian Wine Specialist for more than 13 states. Monchiero is passionate about Italian wines and has advanced certifications from the Court of Master Sommelier and his WSET Level 3 certification with distinction. In his spare time, he enjoys time with his family and racing cars with his friends from the Ferrari Club of America.

Pasta al Forno, or baked pasta, is a dish that originates from Sicily's capital city of Palermo. We are back and ready to jump into the kitchen with you. One of our most requested cooking classes will be held at one of our favorite kitchens - A Tasteful Place at the Dallas Arboretum.
We've teamed up with our friends at The Dallas Arboretum for our 9th LIVE cooking experience. Join the pre-show aperitivo where we taste our selected wines with a backdrop of their stunning, surrounding edible gardens. Each kit includes a $5 donation to the Arboretum and two passes to visit the gardens later this year.
Tune in LIVE as Chef Daniele shares his arancine recipe - a staple of Sicilian cuisine. Our version of arancine, or saffron rice balls, includes saffron, risotto, and meat sauce. A bonus - Daniele will also demo a vegetarian recipe for those who prefer a meatless option.
All of the ingredients are combined, rolled into a ball, and then fried to a golden brown color. The name arancine comes from the word for orange because of their shape and size once fried. They are also popular in the street food culture throughout Southern Italy.

SOLD OUTIn our 8th LIVE Cooking experience, Chef Daniele brings you another Sicilian recipe, Spezzatino Col Sugo Alla Palermitana, or "44 Farms braised beef Palermo style".
Spezzatino is a diced beef stew, except our version braises with soffritto and wine first. Then crushed tomatoes are added instead of the traditional broth.
The best thing about Sicilian recipes is that they bring simple ingredients to life and transform them into a dish you'll want to make again and again! Although this kit doesn't include pasta, you can add-on our special, homemade Cibo Sicilian sausage, and a bottle of wine to complete your in-home dining experience.
This time we will celebrate the wines from Antonio Tonnino, a very good friend of Chef Daniele. The selected wines are incredible and cannot be found anywhere in Dallas - except at CiboDivino!
What makes these two wines so amazing is the vinification process, organic wines, natural fermentation, and most of all a maceration process between 20 and 30 days. This process best absorbs all phenolic elements, resulting in a great concentration of flavors. In fact, the white can be considered an orange wine because of its thickness and deep golden color.

Our suggested wine pairings feature 2 wines from Italian winemaker, Alberto Longo. The Estate of Alberto Longo is located in northern Puglia, outside of the town Lucera, where the Longo family has been farming in the region for over three generations. Having worked the land with his family as a young boy and adolescent, Alberto left the region for his studies and professional career, only to return to match the love for his land with his passion for wine. His mission is to realize a project able to enhance the value of his native territory, Daunia.
Alberto Longo's desire to realize the potential of his native vineyards led him to the trusted hand of his good friend and father of Super Tuscan wines, Giacomo Tachis (the man behind such legendary labels such as Sassicaia, Tignanello, and Solaia). Tachis was then in his late 60's and had stopped bringing on new projects. He recommended his star protege, Dott.ssa Graziana Grassini, to head the project. Using her experience and tutelage under the mastery of Tachis, Grassini has come into her own. At Alberto Longo's Estate, she captures the rustic yet balanced nature of the region's indigenous varietals and uniqueness of the terroir in Puglia.
Consisting of 35 hectares of vineyards, planted to indigenous varietals (Primitivo, Negroamaro, Falanghina, and Nero di Troia), this area is rich in Roman history; it dates back to the 3rd Century BC and is home to many of Southern Italy's earliest Roman dwellings and archeological sites.

Red: Alberto Longo Cacc’e Mmitte di Lucera - A blend of 50% Nero di Troia, 35% Montepulciano, and 15% Bombino Bianco from the Italian southern region of Puglia. Ruby red and purple color, the nose is varietally-driven, intense and persistent, with rich fragrance of wild berries. Palate is well balanced and round, with good body and supple tannins. Pairs great with Mediterranean cuisine, meats and full-bodied fish
Rosé: Alberto Longo Donnadele Rosato - Dedicated to his mother "Adele", this rosé is made from 100% Negroamaro grape, one of the six noble grapes of Italy. Ferments at a controlled temperature and subsequently vinifies in steel, favoring the contact between must and skins, for about 18-24 hours. The floral and fruity scent and the fresh and elegant sapid taste with good structure, make this rosé suitable for both aperitifs and appetizers

Boschetto al Tartufo: A fresh, semi-soft cheese made from a combination of a cow's and sheep's milk. It is infused with shavings of highly-prized rare white truffles that lend an earthy, luxurious, and robust aroma and flavor to the cheese. The cheese is a perfect combination of the pungent taste of the kingly fungus and delicate, sweet taste of the paste. This Italian cheese from Tuscany is aged for less than 60 days.
Pepato Siciliano: An aged, hard pecorino combined with whole black peppercorns, Pepato is matured for a minimum of 4 months to perfection. Like many of the world's classic cheeses, Pepato originated as a staple of the peasant's diet. Today, it is enjoyed by all people - rich and poor. With its characteristic spicy taste, Pepato is a tasty table cheese that is also perfect for grating. Grate it over soups, salads, and pastas. Red: Cantine Barbera Nero D'Avola "Lu Cori" - A feminine, sensual, and fascinating Nero d’Avola with a spicy and lively saline character, this wine truly represents the intriguing Sicilian terroir where it is produced. The wine has a bright ruby red color with intense shades of violet; its bouquet shows marine aromas, scents of mulberries and raspberries, pickle notes, and a touch of light spices. On the palate, it is fragrant and full, with soft velvety tannins that shape a vibrant, Mediterranean personality.
Rosé: Cantine Barbera "La Bambina" - "Dedicated to strong women, to their power and energy, to their tireless motivation in fighting for their beliefs, to their talent for problem-solving despite difficulties and complications. It's the wine that I made against all advice that there was no future for such a rosé in the market and beyond expectation, at the winery and outside. Thanks to the volcanic soil which confers an intense minerality, the wines get elegance, complexity, with an identity not with common Italian wines. The conditions of the vineyard are based on the priority use of natural techniques with a very low impact on the environment. Etna is one of the few Italian regions that still have pre-phylloxera vines which produce very special fruits at high quality. Grapes are supple, earthy and electric due to the rich soil.
